[Feature Request] Prompt for vantage6 version

Problem description
This should get a fixed v6 version:

This is difficult, because we would need to sync releases with the vantage6 releases. The easiest way to achieve that is to make this part of the main repo, but that is impossible (I think) as copier only allows generating these templates from full repo's.

Maybe we could make a submodule for this - that might be a solution. But then we also need to reformat our versioning to x.y.z instead of version/x.y.z because copier uses the first format.
